Complete Lychee Canning Process
We are committed to locking in "freshness from the branch" in every can. The following is our core process flow chart, which clearly illustrates the key steps from fresh fruit to canned product:

1. Raw Material Inspection - Strict Source Selection
Steps: Only high-quality, fresh lychees that are moderately ripe, plump, free of pests and diseases, and undamaged are selected. This is the cornerstone of the final product's taste and flavor.

2. Raw Material Processing - Pitting and Preserving
· Washing: A wave-type washing machine uses air bubbles and sprays to gently and thoroughly clean the lychees' surface impurities.
· Pitting and Peeling: This is the core process. A professional lychee pitting machine precisely penetrates and pushes out the center of the pit, simultaneously peeling the lychee skin and minimizing damage to the flesh, preserving the fruit's shape.
· Grading and Selection: Grading is performed based on size to ensure uniformity within a can. Manual or machine vision is used to remove unacceptable pulp.
 

3. Color Preservation - Preserving Freshness
· Steps: Peeled lychee pulp is highly susceptible to oxidation and browning. We immediately immerse the lychees in a special color-protecting solution (typically containing safe food additives such as citric acid) to prevent enzymatic browning and preserve the lychee's natural milky white or pale yellow color, ensuring a beautiful product.

4. Canning and Filling
· Canning: Processed lychee pulp is automatically filled into cleaned and sterilized jars according to a preset weight.
· Filling: Sugar solution at a temperature above 85°C is added. The sugar concentration is adjusted based on the taste preferences of the target market (for example, the European and American markets may prefer a low-sugar version). The hot sugar solution facilitates the subsequent vacuum formation.

5. Venting and Sealing
· Venting: Before sealing, air is removed from the top of the jar using a vent box to reduce residual oxygen and prevent oxidation and deterioration during storage.
· Sealing: A fully automatic vacuum canning machine is used to seal the jars, ensuring a completely airtight seal.
 

6. Sterilization and Cooling
· Sterilization: We utilize processes such as pasteurization or high-temperature instant sterilization to ensure the elimination of all pathogenic bacteria and spoilage microorganisms while preserving the lychee's taste and flavor to the greatest extent possible. Temperature and time are precisely calculated and controlled.
· Cooling: Immediately after sterilization, rapid cooling is performed to prevent residual heat from over-softening the lychee flesh.

7. Canning, Labeling, and Packaging
· Steps: After cooling, the lychee cans are wiped dry, then coded (production date, batch number), labeled, and automatically packaged into boxes.
